I feel guilty about the meal plans for the past couple weeks. I shouldn’t; my family still ate healthy meals, mostly cooked from scratch, but they were hardly creative. I shouldn’t feel guilty because I was in a period of adjustment, figuring out a schedule with a new baby and a toddler once my husband went back to work and my mom was no longer here every day. But now, now things are running smoothly most of the time, and I feel confident in my ability to cook better dinners, relying less on frozen stuff and my slow cooker (though, there is nothing wrong with a slow cooker, I just feel like I’m cheating using it, lol). So this week, I am tackling some great recipes, that will require me to be in the kitchen the entire time cooking (other than the roast, that cooks itself) This is a huge step for me, the first week since having the baby I am doing this…it is very possible that by Wednesday I will be picking up the phone and ordering Chinese.
Here is what we are eating this week:
Monday – Pork Lo Mein with red peppers and snap peas
Tuesday – Roast beef with roasted veggies (carrots, parsnips, and onions) with mashed potatoes
Wednesday – Chicken pasta bake with Caesar salad
Thursday – Sausage and peppers rice skillet
Friday – Tuna casserole with orange brussels sprouts (not made with Becel plastic garbage, we use butter)
Saturday – Chicken Enchiladas (hubby is making these, Yay for him for planning his meal ahead of time!)
Sunday – off to my parents for dinner!
I probably won’t do any baking this week as we need a break from the sweets. Halloween was not a friend to our waste lines; we have all had far too much sugar.
