Meal Planning while in a sugar coma is tough work!

Oh goodness what a weekend! We have an absurd amount of chocolate and treats in this house from Easter! Today my breakfast was coffee and leftover monkey bread, which resulted in the shakes from all that sugar! Bad idea. Thankfully, the toddler ate a big bowl of yogurt before he asked for some chocolates. He knows they are in the house and thinks he has to eat them all. Right now. Before we change our minds, and take them away, lol.

We do a pretty big Easter in our house, Mass on Good Friday and the vigil on Saturday, presents and treats from Aunts and Uncles and Grandparents for the kids, and the hubby and I exchange small gifts and baskets of treats. Plus an egg hunt! We also host my family for Brunch, and then go my in laws for dinner. It’s a busy day full of sugar crashes, but oh so fun.

I love hosting brunch, and each year I change-up the menu a little bit, so I thought I would share with you what I made:

Monkey Bread

Deep dish fruit pizza

Baked omelet (this is the one item I make every year, everyone likes eggs, and this is an easy way to make eggs for several people!)

Turkey breakfast sausages (you couldn’t even tell they weren’t pork!)

After the kids naps, we went to my brother-in-laws for a big turkey dinner. And than we came home to a mess of a house, with chocolates and toys and dirty dishes all over. Despite being exhausted, the hubby and I cleaned everything so that come Monday morning, the house would be back to normal. I am so glad we didn’t leave anything till the morning, because the baby was up all night with a stuffy nose!

So running on no sleep, and a sugar high, meal planning and grocery shopping was difficult this morning. I really wanted to cave and plan to order dinner tonight and just run out to grab a few things; leaving the big shop for tomorrow. But I forced myself to get it done, and now I don’t have to think about it the rest of the week!

Here is what we are eating this week:

Monday – turkey sausage with rice pilaf and salad

Tuesday – mince and totties

Wednesday – kolbasa with a pasta bake and salad

Thursday – beef and bean burritos

Friday – veg head three bean chili
