A Frazzled Monday Meal Plan

I am not one for change in my routine. Today has thrown me for a loop, and I am finally taking a few minutes to myself to sit quietly.

As soon as we were up we were loading the van and heading to the zoo for the morning. The kids nap times have all been thrown off, thanks to getting there later than normal as we had to stop and buy some bug spray because the place was nothing but mosquitoes! I am so thankful we drove a little further to hit the zoo with free admission, because my son didn’t care about the animals and only wanted to run around the playground! The toddler only slept for 45 minutes on the drive home, he normally naps for close to 3 hours each day, so he has been very challenging to deal with all afternoon. The baby is surprisingly content considering she has hardly napped, but that’s probably because she has spent most of the day strapped to me in our Ergo carrier!

We got home in the early afternoon, and ever since it has been a mad rush to get meals planned, and hit the stores before they get any busier. I really dislike going out in the afternoons; the roads and stores are much too busy for my liking! But with the help of my husband, we managed to hit Super Store and No Frills, and I didn’t have a complete melt down, just a few little ones (I also don’t do well in this 40 degree humidity!)

I can handle a full day of change, or even a few days, but when it is a mix of new and old routines, I don’t think any of us do very well. My husband as the toddler in the basement playing right now, and I’m trying to get the baby to nap again. It’s been a whirlwind day, now just to get through dinner and bedtimes…

Here is what we are eating this week:

Monday – bbq’s chicken kabobs with red & orange peppers and rice (thankfully the hubby is doing all the bbqing, and I just have to cook the rice!)

Tuesday – perogioes and a garden salad

Wednesday – pizza and a garden salad

Thursday – pasta with spinach, tomatoes and mushrooms

Friday – fish with rice and veggies (same as last weeks’ plan, except I didn’t make it last week; we had veggies stir fry over rice because it was way too hot to bake the fish in the oven)

My husband has requested Greek salad for our mason jar salads this week, and I couldn’t agree more. YUM!
