I thought I would start a new run of posts about some must try recipes. I am always linking to recipes in my meal plans, but never write again about how good they were! I also hardly ever follow a recipe exactly, so if I have made changes/substitutions, this is the place I will tell you what I did. So here is a list of some must try recipes from the past little while:
No-Bake Peanut Butter Chocolate Bars – Found these thanks to Pinterest, and they are AMAZING! And super easy. They taste like you stuck a buttery graham cracker crust on a peanut butter cup, and there is nothing wrong with that!
Vietnamese Chicken Sandwiches – This is another fantastic recipe from my Food Network Magazine, I think there has only been one that I’ve tried and didn’t like. I wasn’t sure about this one at first; the sauce tasted weird on its own, and I was starting to doubt the recipe. I poached some chicken breasts instead of using the pre cooked chicken from the store, and I just used regular ol’ dill pickles. Once it was all together it was incredible!
Ramen Noodle Coleslaw – This one has become my go to coleslaw recipe, I found it on All recipes when I was looking for a new coleslaw recipe last fall. It is a vinegar based coleslaw, and with the addition of the ramen noodles and green onions, it turns some regular bagged cabbage into a fancy salad. I do need to find a different ramen noodle brand though, one without all the MSG…if that is even possible!
All of these recipes are easy to make, but seem like you spent a lot of time on them, which is my kind of recipe! And of course, they can all be made on a tight budget. Remember to plan your meals based on what is on sale that week! I love the Vietnamese sandwich so much, but we won’t be having it again until chicken is on sale.
