Meal Plan Monday – October 1st

WOW! It’s October! We are in the thick of our craziest couple of weeks of the year: 4 birthdays and Canadian Thanksgiving, a wedding reception (#2 of 3 this Fall) plus we have decided to take a mini vacation for 3 days, so now I am planning  for that too! But once that trip is over I should be almost done my shopping (thanks to some major outlet shopping in the US!) and will be able to relax until the middle of November. Well, relax as much as a mother of two toddlers can anyways.

Here is what we are eating this week:

Monday – ham and mashed potatoes and brocoli

Tuesday – crispy chicken (using the Racheal Ray recipe that I love, but trying it with chicken, since all the Canadian beef seems to be contaminated with E. Coli right now…)

Wednesday – Veggie Marinara (without the chicken, it taste just as yummy and costs much less!) with roasted sweet potatoes

Thursday – chicken and dumplings

Friday – fish tacos

I’m also going to be making more baby food; my little girl loves her broccoli and it’s on sale, so I will make up a batch of kinda chunky baby food for her. And I have about 15 bananas in my freezer too, so some whole wheat banana muffins will be made too!

  1. I'm hopping by from Menu Plan Monday today! Don't you just enjoy this time of year? I love the crisp Autumn temps of Southern Maine when I was living there. For the last 18 yrs I've been on the West coast so no fall foliage to enjoy. Your menu plan sounds so delicious.
    1. I love have 4 seasons, I don't think I could live somewhere where they didn't happen. We have cooler temps, and the leaves are changing here in Ontario, and its beautiful. Fall is by far my favourite season; best food and best fashions :)
