Back to our regular routine today! This weekend was busy: we moved furniture around, we took the kids to a Christmas party at our Church, we tailgated with friends and attended an NFL game. But now, it’s time to get back to normal, and get back to eating healthy!
Here is what we are eating this week:
Monday – pulled pork sandwiches (frozen leftovers from a few weeks ago!) and garden salad
Tuesday – meatballs, roast mini potatoes (the BEST roasted potatoes you will ever have!) and roasted brussel sprouts
Wednesday – baked spaghetti (frozen leftovers from last week) and garden salad
Thursday – hotdogs smothered in veggie chilli
Friday – mexican loaded sweet potatoes
My salads don’t sounds too exciting, so it is very possible they will get kicked up a notch with some black beans and salsa and cheese instead of just cucumbers and tomatoes, which reminds me that I should probably make up a few salad jars for myself and my husband for lunches this week.
I know the kids will have no problem eating most of this, I just hope my son doesn’t realize he didn’t get to help plan this week. Last week went so well at dinner, I hope it can continue! I had every intention on getting him to help plan meals on Saturday, but things were just to chaotic that it never happened.
