Back to reality for my husband and I! We snuck away this past weekend to celebrate our 5th wedding anniversary. It truly is amazing how easy it is to get around, eat in restaurants, and basically do anything without two kids in tow. We enjoyed every single minute, but at the end, could not wait to get back to see our kids! And of course, as soon as we were back to the temper tantrums, runny noses, and diaper changes, we were talking about getting away again…the grass is always greener I guess.
Once again, this week the sales aren’t that great. I am assuming it is because it is winter, and nothing is growing locally right now, so all the produce being flown in is more expensive. That, and it’s the week leading up to the Superbowl, so the flyers are filled with sodium filled chicken wings and potato chips!
It was a struggle to come up with healthy meals this week, but at the very least they will all be cooked from scratch, and we’ll eat large salads on the side of each:
Monday – sausage, potato and veggie roast (with carrots, mushrooms and red pepper) and salad
Wednesday – sausage and spinach pasta with salad
Thursday – chicken and avocado tacos with salad
Friday – baked fish with mac and cheese and salad
