Well we sure had a gorgeous weekend, full of gardening and a little playing outside too. Above normal temps meant playing outside in just t-shirts, with the sun shinning down on us. It was wonderful! I managed to get the vegetable garden turned over on Saturday morning, added some manure and fertilizer too! Sunday afternoon I planted the seeds: carrots, green onions, turnips, spinach, and lettuce! In a couple of weeks I will plant the green beans, once the chance of frost is gone. We even used the collected rain water to water the garden; I feel so self-sufficient!
Since it will be 5 or 6 weeks before we can harvest anything, I guess I am left to purchase produce this week. Here’s what we are eating:
Monday – Greek pita tostadas
Tuesday – my famous spaghetti (with meatballs instead of ground beef)
Wednesday – hot dogs and sweet potato fries
Thursday – slow cooker roast beef sandwiches with roast mini potatoes and garden salad
Friday – veggie stir fry over noodles
