Another week, another meal plan. I’m pretty excited about this one! My husband asked for lean meats and loads of veggies, and I’m in the mood for fresh light dishes that get us out of this winter deep freeze funk. I think I have delivered with this plan.
Here’s what we are eating this week:
Monday – lime cilantro chicken burritos
Tuesday – pizzadillas with pepperoni (ok, not that lean, but only a little of it!) red peppers, onions and mushrooms
Wednesday – pork low mein
Thursday – sweet n sour meatballs with rice and Greek salad
Friday – baked lemon sole with mashed potatoes and sautéed brussels sprouts
We are also baking banana muffins today, and testing out the new yogurt maker this week!
