Meal Plan Monday – March 19 2018

It has been the Monday-est of Mondays around here! I wanted to wake up excited that March break was over and the two oldest were heading back to school. I had set my alarm again and was going to get up and enjoy coffee and breakfast before they woke. I was going to start off the week on the right foot.

Well, that didn’t happen. The two year old woke up at 6:15 and was screaming my name. Like loud and angry and how dare I not get to him the second he opened his eyes. He woke up on the wrong side of the bed, er crib, which made me do the same. He has been impossible and grouchy ever since. We got the older two off to school, he screamed the entire time, we came home I made my grocery list and we headed out to the store. He yelled and was rude and angry the entire time. He is thankfully down for a nap, and I can relax a bit. Anyone else have a kid that was just perma-grumpy? Angry and rude and not happy even if they get what they want? It’s so mentally exhausting, he just follows me around calling my name and yelling over everything. I try to let it not get me down, my mood shouldn’t be determined by a two year old, right? It’s hard though.

Ok, enough of the ranting! The poor guy does have his good moments, like yesterday when we were out and about and he was strapped in the van for 2 hours and didn’t puke (he gets car sick sometimes) instead he happily played with a little transformer he brought and danced like crazy when a song came on that he knew. So, I’m just gonna get over his grouchiness and focus on the good, and be happy I’ve only got one kid right now to manage while he naps and the others are at school!

I hope you all had a great March Break. We enjoyed a few days of fun themes and a few days of endless laundry and cleaning up when we were hit with a stomach bug. I was the only one out of the six of us that didn’t get it! Now on to our menu for the week. I had a different menu planned before I left for the store this morning, but had to make some changes as I couldn’t get everything that was on sale that I had wanted.

Here’s what we are eating this week:

Monday – Pulled pork sandwiches with coleslaw and veggie sicks

Tuesday – Pierogies with ham fried rice (using Green Giant Sweet potato & Cauliflower riced veggies)

Wednesday – Big salads with chicken

Thursday – Baked chicken breasts and roasted veggies

Friday – Baked spinach and cheese ravioli with loads of veggies
